Mushroom Risotto and Pinot Noir Pairing

Creamy Mushroom Risotto Recipe
Serves: 4
Prep Time: 15 mins
Cook Time: 30 mins
Ingredients:
- 1 tbsp olive oil
- 2 tbsp butter
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 300g arborio rice
- 150ml Chateau Mârmalade Pinot Noir
- 1L warm vegetable or mushroom stock
- 300g mixed mushrooms, sliced
- 1/2 cup grated parmesan
- Salt and pepper to taste
- Fresh thyme to garnish (optional)
Method:
1. Heat oil and 1 tbsp butter in a pan. Add onion and garlic, cooking until soft.
2. Stir in mushrooms and cook until browned.
3. Add rice and stir to coat. Pour in Pinot Noir and let it absorb.
4. Add stock gradually, stirring until the rice is creamy.
5. Stir in remaining butter, parmesan, and season.
6. Serve garnished with thyme and a glass of Pinot Noir.
